The Adelaide Oval Stadium Management Authority (AOSMA) is the organisation responsible for the management of the Adelaide Oval precinct and is a joint venture between football (South Australian National Football League) and cricket (South Australian Cricket Association). The Adelaide Oval is a world-class, multi-purpose 53,000 seat stadium. It is Adelaide’s number one tourism destination, having attracted over 1.8 million visitors a year and is a significant contributor to the State’s tourism assets with the award winning RoofClimb and Stadium tours, as well as Australia’s first ever integrated stadium Hotel – Oval Hotel.

AOSMA employs approximately 220 full-time staff, plus 1,500 casual employees, in areas such as Corporate Services, Stadium Operations, Tourism, Food & Beverage, Sales, ICT, Maintenance and Grounds, making Adelaide Oval one of the state’s largest employers in the hospitality and tourism sectors. Chef de Cuisine - Hospitality

Our industry leading Kitchen Brigade has an excellent opportunity for an talented and experienced Chef de Cuisine to join our award winning Hospitality team and deliver food services at the Adelaide Oval at a World Class standard. To be successful in this position, you will be passionate about creating exceptional guest experiences through food and have the personal drive to take your culinary experiences to the next level. 

The Chef de Cuisine reports to the Executive Sous Chefs. This position also liaises extensively with the Executive Chef, and Senior Kitchen Team as required to ensure a coordinated approach to the Food and Beverage delivery at Adelaide Oval. 

What you'll be doing

  • Controlling the day-to-day kitchen operations in relation to people and processes including, resource planning, food preparation and kitchen management.
  • The management and coordination of a food safety plan (HACCP).  
  • Continually delivering a high-quality product consistently with a strong attention to detail.
  • Managing large teams with varied experiences, including both the full-time kitchen brigade and casual workforce.
  • Knowledge and experience in traditional and modern cookery methods and current food trends.
  • Mentor and coach other members of the kitchen team, including Apprentices. 
  • The design, creation, and final execution of multiple menu offerings.

What you'll bring

  • Experience in the Hospitality industry, with particular significance around stadiums, major events, large scale venues and convention centre environments.
  • A strong understanding of bulk production and banqueting, particularly around the logistics of this style of catering.
  • The ability to facilitate a culture where team members enjoy coming to work and respect the team environment.
  • Previous experience as a Head Chef or Chef de Cuisine position for a minimum of three (3) years, preferably within a stadium or similar large-scale venue back round, with relevant qualifications in Kitchen Management.
  • An understanding of multi-function Hospitality operations and the implementation of menu and function packages is essential to this role
  • Ability to maintain strong working relationships with other departments to ensure effective communications for operational issues, serves as a role model for inter-departmental collaboration and support.
  • A passion for South Australian food and wine.
  • Enthusiastic and motivated attitude with a strong work ethic. 
  • Must have sound knowledge of use of technology systems such as Microsoft Office suite, mobile application programs for online learning and WHS compliance.
