Our Monarto team members are responsible for the effective day-to-day running of the Monarto Safari Park café, to deliver pre-prepared and made-to-order meals for families and visitors of Monarto Safari Park. The Kitchen team also provides ad-hoc catering services such as BBQs and function services to specific locations around the zoo. 

The café operates 7 days per week all year round, with school holidays and summer months being peak operational periods. The successful candidate will be flexible with their working days and hours on a rotating roster and be able to meet the demands of our busy peak periods.

Café Cook

About the role:

The Café Cook will Report into the Venue Manager and be responsible for the day to day delivery of all Food services at Monarto Safari Park Cafe and the outpost Cafe during peak times. In addition, the Café Cook will provide catering support to for guest's special events such as weddings and birthdays. The position will be required to lead the way at this wild venue, you will need to be a contemporary, hands-on leader and willing to champion our brand. Your creative ability to overcome problems with modern, versatile solutions. 

What you'll be doing:

• Delivery of a quality food product.
• Food preparation to set up the team for peak periods. 
• Short order cooking of Café items such as wraps, burgers, and chips. 
• Baking of muffins, cakes, and cookies. 
• Planning and coordinating food operations in consultation with the Venue Manager.
• Providing assistance in running Functions alongside an offsite Kitchen Brigade. 
• Ensuring delivery of staff training and development programs including food safety. 
• Working with the Kitchen staff on the introduction and implementation of new and innovative menus to generate revenue and meet patron expectations.
• Ensuring the correct use of inventory control systems, purchasing and delivery of supplies through supply options, product quality, and cost levels.
• Adhering to all policies and procedures; including WHS and HACCP.

What you'll bring:

• Trade qualified Chef and extensive industry experience (desirable). 
• Working knowledge of delivering delicious Café style food.
• Management of a Café junior Kitchen Brigade including workforce planning, rostering, and recruitment. 
• Strong leadership and people management skills.
• Proven ability to train and positively engage with employees.
• Ability to maintain high workloads and meet deadlines within specified time frames.
• Implementation of new menu items. 
• Must have own reliable transport to and from work.

Please note that out-of-hours work will be a requirement of this role, in line with the business operations of Monarto Safari Park. This includes working weekends, some nights, and public holidays.
